Wedding season is in full swing, and as a recent bride, I know all too well what a hectic schedule you are running, especially the week of the big day! In between final dress fittings, making sure all the groomsmen sent in their tux sizes, and putting the finishing touches on hotel welcome boxes, you still need to continue to eat healthy. That takes time and planning.
One mistake I think a lot of brides make the week of their wedding is eating too little and wearing themselves out with all the festivities. You also get stuck chatting it up with people you haven’t seen in ages during the week’s events, and often miss your chance to sit down and eat a full meal.
For me, it was helpful to have a “go-to” arsenal of mini meals and snacks that kept me full and energized without compromising the waistline. I’m a huge believe in a hearty breakfast, so most of these I had in the morning. Then I switched up throughout the day for an easy lunch or snack. I love these quick and easy recipes to go along with my favorite staples.
Remember: you are kind of running a mini marathon this week and don’t need to be famished at the finish line! It’s going to be an amazing and memorable experience, and you need energy to enjoy it! Plus, no one likes a “hangry” bride!
Oatmeal: Morning or night, this is still my go-to if I’m too tired to cook a full meal. You can change it up with toppings (personally I’m a big banana and powdered peanut butter fan). I love this baked version so you can have it ready to go and quickly heat up when you need it.
Eggs: This is an easy way to get protein without lots of cooking and mess. There’s no doubt these guys are pretty magical when it comes to keeping you full and providing many daily nutrients. I have mine with salsa on top!
Avocado Toast: Talk about an easy to make and filling snack, on whole grain toast of course! I like a little Siracha on top as well!
Nut Butter Cookies: Love to have these ready to go at all times. Bake up a batch of these little power pockets and you will have some a quick and healthy snack on the run that also satisfies your sweet tooth.
Berries & Yogurt: Whether it’s breakfast or in between meals this is a favorite combination. Dress it up with this recipe for an extra treat – you deserve it!
