We assembled a task force of staff from our Birmingham offices, which include sister brands Southern Living, Coastal Living, MyRecipes, and Oxmoor House, to try the Cooking Light Diet for 3 months last fall (October-December 2015) and blog about it. Here’s what they had to say.
It’s been over a month, and I still love the meal planning aspect of the Cooking Light Diet the most. To be completely honest my husband and I have slacked off the last few weeks – primarily due to a furry addition to our family, Scout (our new German Shepherd puppy).

Sleepless nights and constant playtime have left little time for cooking. Our PLAN screen has been taken over by “dine out” and “leftovers” (from take-out). However, from following the CLDiet fairly closely in the beginning, it has helped when deciding what to order as a healthier option from many take-out places. From following previous Cooking Light recipes, I’ve learned how to pick out key words in menu items that may be a healthier option than our norm.
Our sweet puppy is beginning to sleep more throughout the night, so now I’m trying to get back on the healthy train for the next few days before Thanksgiving. Scout even made a visit to a Cooking Light photo shoot last week and our photographer snapped a photo!

December is looking up as both our schedules calm down and we are in town more! With the colder weather, we’re planning a few chili and stew recipes this week – feeling optimistic again! And we’re excited to try this beef stew recipe with butternut squash…love adding in a fall flavor!
