If you think your weeknight routine is boring, you should see mine: Monday night is macaroni and cheese, Tuesday is tacos, Wednesday is “Whatever-I-can-pull-together-before-my-shows-start Bowl.” Thursday gets no love either because I’m usually grabbing a cocktail with friends before dinner, so I’ll heat up one of my frozen Individual White Chicken Pizzas (a real lifesaver!), and Friday is definitely Mexican night. (Mexican night is my favorite!)
If your dinner rotation could use a little love, turn to these five ideas. I pulled all of these from my Cooking Light Diet dinner history, so I’ve made all of these–and whole-heartedly recommend them to anyone. They’re also all ready in 45 minutes or less. After all, no one has time to slave over a kitchen stove on Wednesday night. Modern Family is on!
Fried Chickpea and Arugula Pita Sandwiches with Lime Tzatziki: With flavors reminiscent of a falafel, these pita sandwiches take less work, are tasty with lots of texture, and an easy weeknight meal to put together.
Mini BBQ Meat Loaves with Smashed Blue Cheese Potatoes: If you skip the potatoes, you’re missing the point. The tang of the barbecue sauce and the “funk” of the blue cheese really make this dish so special and fun!
Curried Shrimp and Melted Cherry Tomatoes: Fragrant Indian garam masala elevates what would be a very basic shrimp dish to new heights. Melted tomatoes, you ask? Tender cherry tomatoes break down quickly in heat and turn into a luscious cream-like sauce.
Mini Philly Cheeseburgers: How adorable are these? These cheesy sliders are a family-friendly hit and ready in just 20 minutes.
Spiced Pork Tenderloin with Sautéed Apples: It’s delicious in the fall and winter, but the always-popular combination of pork and apple will never be unwelcome at my table.
Baja Fish and Avocado Tostada: Your go-to weeknight dinner cheat just arrived. You can make a tostada out of basically any ingredients as long as you start with a crisped tortilla. For this one, creamy avocado sits atop pan-seared tilapia for a fresh and flavorful meal.
Beef Stew with Butternut Squash: Take your basic beef stew to the next level by making this simple, fragrant beef tagine featuring butternut squash.
Flank Steak with Herb Dressing and Charred Broccolini: Simple doesn’t have to mean boring. Boost basic grilled steak with a zingy, herby dressing, and make sure the side shines, too. Charring broccolini makes the flavor smoky and warm.
Tomato Ravioli: Take plain cheese ravioli from boring to beautiful with a mix of cherry tomatoes, shallots, and basil.
Apple and Bacon Pita Pizzas: Smoky bacon, rich walnuts, and woodsy thyme give depth to these quick personal pizzas.
Bucatini with Meyer Lemon Cream and Chives: Meyer lemons—with their hint of orangey sweetness—make a bright and irresistible flavoring for this pasta dish. For an extra-special touch, you can garnish with lemon rind strips and serve with lemon wedges, if you like.
Love these dinner ideas? The Cooking Light Diet delivers custom meal plans tailored to your specific dietary needs and weight-loss goals every week. It’s healthy food the whole family will love–and you’ll love delivering them healthy food.
