Salads Suck: Better Lunches, Less Lettuce

I want to be as healthy as the next person, but can we all agree that salads are getting absolutely boring? I get it, lettuce. You’re healthy. But there has got to be other ways to pack in the nutrients without all of this green stuff. I’m ready to kick it up a notch. Luckily on the Cooking Light Diet you don’t have to be serving up salads every day for lunch. We’ve got plenty of options, including these 4 favorites of mine.
