The avocado is a nutrition knockout. It’s packed full of healthy fats, fiber, and vitamins. It makes an excellent addition to just about any meal, and it’s the perfect way to round out snacks so they’re extra satisfying. Over the next few days, I’ll share a few of my favorite fast avocado snacks. Enjoy!
Mini Avocado Toasts with Pumpkin Seeds
Ingredients
1 small whole grain baguette, cut into 1/2″ slices
1 avocado, cut into thin slices
1 tablespoon pumpkin seeds
1 teaspoon flaky maldon salt
Directions
In a mini food processor, pulse pumpkin seeds a few times to get coarse pieces. Toss with flaky salt.
Preheat broiler to high. Place baguette slices on a baking sheet and toast for 90 seconds, or until slightly toasted (not quite golden).
Top baguette slices with 2-3 slices of avocado and top with pumpkin seed mixture.
