We’ve assembled a task force of staff from our Birmingham offices, which include sister brands Southern Living, Coastal Living, MyRecipes, and Oxmoor House, to try the Cooking Light Diet for 3 months and blog about it. Here’s what they’re saying.
When I first started the Cooking Light Diet, I balked at the shopping list. I had selected seven dinners to make (removing the breakfasts and lunches from my plan and shopping lists, because I’m just not that organized), and had a tiny heart attack when I forked over $200 for my groceries. For dinner. For the week.
I don’t skimp on food–my family eats fresh produce, sticks to the perimeter of the grocery store, and generally avoids having too many packaged goods hanging around to tempt us, but the thought of spending $200 on seven meals for my husband and myself was a little too much.
“Well,” I thought, “this will be a one-time experiment.”
Then something amazing happened. Each meal generally served four, sometimes two but sometimes six. That meant that the seven dinners I purchased actually lasted us two full weeks and fed me lunch each and every day. Instead of bringing a bagged salad or running out to grab an $8 salad (again), I had amazing leftovers, like these guys:

Based on my figures, we got at least 38 meals out of the seven-meal plan: 28 dinners and ten lunches. That means that each meal cost about $5.25, which is a bargain for dinner and certainly a steal for a lunch out, not to mention that the food you’re eating is delicious and good for you.
Consider me the Diet’s grinch whose heart grew three sizes that day. I’m in.
