Cherry, Cashew Butter, and Pork Tenderloin Sandwich

It’s time to think differently about nut butter sandwiches. Sure, peanut butter and jelly sandwiches are a time-saving stand-by, but the bread aisle is bursting with so many new varieties of spreads and nut butters. It’s hard not to buy a jar of each and start experimenting. That’s exactly what we did, actually, and from those taste tests, we created fun and tasty nut butter sandwiches that will make lunches (or quick dinners) anything but boring. Start with 2 (1-ounce) slices of whole-grain bread; pile on the goods.

Cherry, Cashew Butter, and Pork Tenderloin Sandwich

2 teaspoons cashew butter
2 ounces thinly sliced grilled pork tenderloin
2 tablespoons caramelized onions
1 tablespoon chopped dried cherries
1/4 cup arugula

Serves 1 (Serving size: 1 sandwich)
