For many people, this time of year means indulging in their favorite fall flavor – PUMPKIN EVERYTHING! Unfortunately, a lot of those pre-packaged pumpkin goodies popping up everywhere tend to be loaded with unnecessary sugar and calories.
This year we thought we would look at the savory and lighter side of pumpkin. While it is delicious in many desserts, it pairs quite nicely in your main dishes and can even help lighten them up!
Here’s one of our favorite healthy pumpkin soup recipes:
Creamy Pumpkin-Red Pepper Soup: This soup can be topped with a variety of things: We love Parmigiano-Reggiano and rosemary, but savory sprinkles like chopped smoked almonds or toasted pecans would be lovely. This tastes even better the next day…or the day after.
