When sweet corn arrives at my local farmers’ market, it heralds the beginning of a beautiful season. But, when ears become as scarce as an Alabama snowflake in December, I know summer is coming to an end once again. We still have a few ears around, so before they’re gone for good, I’m taking one last moment to celebrate corn. Here, I’ve included a few of my favorite corn-centric recipes so you can enjoy corn before it’s gone for the year, too.
Basil and Corn Farro Salad: Talk about whole grain goodness! You get a double serving with this easy salad. Add some chicken to it, and it becomes a main. Keep it as a side, and serve it with your favorite grilled chicken recipe.
Summer Squash and Corn Chowder: This spectacular chowder is a timeless reader favorite. It calls for frozen corn, but I use fresh when it’s available. You use summer squash, too, so consider this a double tribute.
Esquites (Creamy Corn Salad): This is one of those sides that is far too dangerously delicious for my own good. Again, this one calls for frozen corn so that it’s evergreen, but I cut fresh kernels and stir them into the mayo mixture raw. Serve with your favorite grilled steak or pork chop.
Corn Pancakes with Smoked Salmon and Lemon-Chive Cream: Finally, a main dish idea that features corn. These corn pancakes are delicious right off the grill, but I implore you to use restraint and wait until you can try them with the salmon and herbed cream. If you like it as much as I do, I also think these make an acceptable (and excellent) breakfast or brunch.
Sweet Corn Ice Cream: After you’ve shucked your last kernels, get every drip of exquisite corn flavor out of them by steeping them in a cream mixture and making, what else? Ice cream.
