Thanksgiving can be incredibly stressful. The turkey is too big (or too small). Is it done yet? Is it dressed or stuffed? Cornbread! No, traditional herb seasoned. Gotta make the gravy! Oh, wait! Brussels with or without bacon? What about the potatoes!? Lumpy or smooth…
It’s just all so, and too, much. So when it comes to dessert, leave it to the last minute! This idea (and four more listed below) will take less than 30 minutes to put together, and everyone gets a slice of happy, stress-free sweetness.
Cinnamon Apple Dutch Baby
2 tablespoons butter
2 apples, cored and sliced
1 tablespoon sugar
2 teaspoons cinnamon
1/2 cup all-purpose flour
1 tablespoon sugar
1 teaspoon vanilla extract
2 large eggs, beaten
1/2 cup low fat milk
1. Preheat oven to 375 degrees. Heat a cast iron skillet over medium heat. Melt butter and add apples, cinnamon and sugar. Cook apples for 5 minutes,or until soft.
2. While apples are cooking, whisk together vanilla, eggs and milk. Add flour and sugar and beat batter until smooth.
3. When apples are soft, remove from pan and add batter. Bake for 20 minutes, or until puffed and cooked through. Top pancake with apples and serve.
