Mini Popcorn Sundaes
1/2 cup vanilla bean ice cream
1 gingersnap cookie, crushed
1/4 cup low-fat Holiday Drizzle popcorn, such as Boom Chicka Pop
Raspberries, for garnish
Mint leaves, for garnish
1. In a small bowl, press crushed cookies into the bottom to create a crust.
2. Add popcorn and ice cream and garnish with raspberries and mint.
