Summer Desserts in a Cup, Part 1: Frozen S’mores

Frozen S'mores in a CupWhen temperatures begin to climb (we’re topping out at 95 degrees here in Birmingham), I crave a little something cold and sweet, something fast and fun that yields just enough for one. Desserts in a cup are the way to go. Not only are they portable and adorable, they’re pre-portioned, so I’ll hopefully be a little less tempted to stick my head in the freezer and my spoon into a half empty carton of ice cream. The combinations are endless, and you’ll see many more in the coming weeks.

First up: Frozen S’mores in a Cup.

Layer 1/3 cup non-fat chocolate frozen yogurt, 1 tablespoon1 graham cracker crumbs, 1 toasted marshmallow (about 20 seconds under the broiler), and 1 tablespoon lighter whipped cream in a small mason jar or juice glass. Repeat the layers and garnish the glass with a toasted marshmallow. Dig your spoon right to the very bottom to excavate all the delicious layers. Enjoy!
